Nothing wrong with phone in hand. Can use XS Camera Record Privately app. Can hold something else in your hand with it too. Can put a pin-hole Go Pro in a water bottle. Your brain and your heart rate are the only things holding you back. Getting “caught” isn’t a thing. At least there isn’t a reason why it should be.
Hello bro, I’m an Asian living in Taiwan. I have been doing CAP since I was 17 years old. It has been more than ten years now and I have never been caught red-handed. Because I am timid and cautious, my principle is to act naturally and put safety first. I always hold my phone at my side, like most people do when walking, and take short-distance photos by constantly walking past it, in small quantities and multiple times.

Don’t hold your phone above your waist.

Do not keep checking the screen during the process.

Hold the phone close to your body and move slowly to reduce the chance of others noticing that your screen is recording.

When there are not many people around to cover you, don’t get too close or stay too long, for me no more than ten seconds.

Keeping a safe distance will help you get nice full or half body shots, but if you just want a close-up, it’s up to you.
I want to raise a point that is rarely mentioned. I find that a lot of people get caught because they stare at their target for too long. Through observation and experience, I have found that when you stare at someone for more than ten seconds (it varies from person to person), even if that person is unaware of your presence at first and has her back to you, she will suddenly sense that she is being stared at and turn her head to check.
This is an instinctive human perception that some people may not believe in or underestimate. So I am very aware of that. When I find my target, I do my best to avoid eye contact and staring at them for too long. I was always pretending to be in a daze or looking somewhere else, so most of the time I didn’t know the details of their specific appearance and looks until I watched the film at the end. You may find that there are many ways to do it, just try the method that feels most natural to you.
Im on an android and started using SC-OS6. You can set the app to open minimized and run in the background. I set my side button to open it on a double tap, volume up will start recording. I know the vieo started if my phone vibrates once. I jusy take video usually then review later. Everything is stored to a hidden folder on my phone so it doesnt show up in my picture gallery. I never have to open the actual camera, app. Ill usually have news or recent texts open so of I was asked if I was recording I could literally just show them my screen (luckily thats never happened).Hell, I can even open my picture gallery and you’ll just see my wife and kids.
