Make sure to set your phone to video mode, hit record, then walk behind your subject.

I always like to have a drink in my hand and make it seem like my hands are full. They are far less threatened with a phone in your hand if it looks like your struggling… sometimes in the stores they will actually offer a hand which will lead to good captures as well. Red bulls work well because they arent bulky and you can move the phone at different angles very easily. I also use qvr quick video recorder and then pick a folder and create a .nomedia file so it doesnt show up in your gallery until you are ready to edit

You can put earphones on and pretend you are on a call. I think sometimes if you look like you are in a rush, you might get the benefit of the doubt lol.

Always hold your phone upside down, always up close. Look anywhere but at your subject or phone. Use an app that lets you record video with the screen off.
Switch positions behind your subject to appear completely random, gives you also the extra benefit of other angles sideways.

Pretend to adjust your pants pointing phone towards target make sure it’s your dominant hand

Hide a GoPro inside something. You can modify their lens or buy one that way. We are all tired of seeing jumpy blurry crap videos.

@s7126 you can also try carrying a thermal water bottle with the handle while holding your phone. 
I sometimes just pretend like I’m going to buy one. They have tons them at Walmart.
